You can find the Tahini here LIST OF INGREDIENTS For the dough 500g strong white flour 1 teaspoon dry yeast 1 teaspoon of sugar 1 teaspoon of salt 3 tablespoons vegetable oil Luke warm water For the filling 6 tablespoons of tahini 3 teaspoon cinnamon 6 tablespoons of sugar METHOD Start by activating the yeast. Dissolve the sugar (1 teaspoon) in a tea cup with one part boiling water and two parts cold water. Add the yeast and whisk. Leave for 15 minutes. It should go frothy. (If it doesn't discard and start again with fresh pack of yeast). Whisk again and add to the flour into which you have already added the salt. Add the vegetable oil and enough of luke warm water to make a soft, elastic dough. Kneed for 10 minutes. Place in a large oiled bowl and turn dough over so that the dough is well greased. Cover with cling film and leave to rest till it has doubled in size. Approximately an hour and a half. Pre-hear oven to 200 degrees c or 400f. Divide dough in 3 pieces and roll each one in turn into a large disc. Spread 2 tablespoons of tahini onto each disc, sprinkle with 1 teaspoon of cinnamon and 2 tablespoons of sugar. Roll into a sausage shape and stretch to elongate. Cut into 4-5 pieces and with the palm of your hand press on top of each tube to make a disc. With a roller pin flatten out to make round 4 inch discs. Bake for approx 20 minutes or until golden.
