Cypriot Pea & Artichoke Stew You can find the artichoke hearts here LIST OF INGREDIENTS 2 tablespoons of olive oil 300g frozen peas 1 jar of Cypressa artichokes drained 200ml of vegetable stock 1 small onion finely chopped 1 garlic clove finely chopped 1 tablespoon tomato paste 1 tablespoon of lemon juice Salt & pepper to taste METHOD Gently fry the onion and garlic in the olive oil until slightly golden. Add the peas, artichokes, tomato paste, pepper, lemon juice and stock. Bring to boil and gently simmer for approximately 15 minutes or until sauce has thickened (not watery). Season to taste. Note that the artichokes already have some salt so you many not need to add extra. Serve with crusty bread. Recipe by Nina Charalambous
