Orange & Almond melting moments Ingredients: Makes 12 You can find the Almonds here LIST OF INGREDIENTS For the biscuits: 200g butter ¾cup icing sugar 100g almonds 1cup plain flour 1cup cornflour 1/2tsp baking powder For the filling: 50g butter Zest of 1 orange Juice of ½ an orange Approximately 1cup icing sugar METHOD Heat the oven to 180°C on bake. If using raw almonds, put these on a baking tray and roast for approximately 5-10minutes (careful not to burn). Allow these to cool, and roughly chop. Biscuits: Cream the butter and icing sugar together. Add the almonds, sieve in the other dry ingredients and stir to combine. The mixture may still be slightly crumbly but this is ok. Take small handfuls of the mixture and roll into a ball (this should make the mixture come together). Aim for 24 biscuits. Lay these on a baking tray. Press down lightly with a fork, bake for approximately 20 minutes or until the biscuits start to slightly brown. They should still be pale when cooked. Leave to cool. Filling: Cream together the butter with the orange rind and half of the icing sugar. Add the orange juice and the remaining sugar bit by bit until a light fluffy texture is achieved. More or less sugar may be required depending on the amount of orange juice. Sandwich 2 biscuits together with a generous amount of the filling. Lay on a plate and dust with icing sugar.
