Serves 3-4 people Feta Cheese METHOD Put lentils in a pan and add enough cold water to cover. Bring to the boil and simmer until lentils are tender. About 25-30 minutes. In the meantime make the dressing. Crush garlic clove with the salt with a pestle and mortar into a paste. Add the mustard powder and mix. Add balsamic vinegar and olive oil and stir to mix. Once lentils are cooked, drain. Put in a serving bowl and add the dressing. Season with pepper. Mix well and crumble feta cheese on top. Serve immediately with some crusty bread.
