COUSCOUS SALAD

Ideal for serving with grilled fish or chicken

LIST OF INGREDIENTS 1 Cup Cypressa Coucous

1 Cup Water

1 Chicken Stock Cube

2 tbsp Cypressa Extra Virgin Olive Oil

1 Small Red Onion

1 Red Chilli

1 Large Bunch of Parsley

1 Large Bunch of Mint

1 Lime

Salt & Pepper

METHOD Place the couscous in a bowl and add the water, olive oil, chicken stock cube (crumbled up) and the salt & pepper. Mix well and leave to soak for 10 minutes, until all the liquid has been absorbed and the couscous is light & fluffy. Finely chop the onion, parsley, mint & chili and add to the couscous. Grate the zest of the lime and add along with the juice from the lime. Chill the mix for 30 minutes in the fridge before serving. Ideal for serving with grilled fish or chicken
