LIST OF INGREDIENTS
Apple Puree
4 apples
1 tablespoon lemon juice
Caster sugar to taste (approx. 3 tsps)
Cake
8 eggs
325g almonds
275g caster sugar
1 tablespoon lemon juice
40g flaked almonds
METHOD
Peel, core and chop the apples roughly. Put them in a saucepan with the lemon juice and sugar and bring the pan to a bubble over a medium heat. Cover the pan and cook over a low heat for about 10 minutes.
Mash the apple to a rough puree with a wooden spoon or fork.
Preheat the oven to 200 degrees C or Gas mark 4
Grease a 10 inch tin and line the bottom with baking parchment.
Blitz the almonds for the cake until ground.
Put the apple puree in a blender with the eggs, ground almonds, caster sugar and lemon juice and blitz until smooth. Pour into the prepared baking tin and scatter the flaked almonds onto the top of the cake (alternatively roughly chop 40g almonds and scatter).
Bake for 45 mins.
Put on a wire rack to cool slightly and then remove from the tin, place on a wire rack and leave to cool completely.
