There are convincing reasons why starchless depositing has become the process of choice for producing high-quality jellies and gummies. Compared with starch moguls, the process is completely hygienic. Small footprint, low energy costs and elimination of starch drastically reduce capital and production costs. Depositing allows manufacture of confectionery that cannot be made on a starch mogul, such as intricate 3D shapes. The process adheres to the principles of GMP and is readily validated to FDA/EMEA standards, making starchless depositing suitable for all types of functional, medicated and pharmaceutical confectionery. After choosing the manufacturing process, the key question is choice of supplier. Here there is one crucial issue: experience. Some mogul manufacturers now offer the starchless moulding process - but their systems are simply adaptations of mogul systems - with several significant flaws. Baker Perkins has been involved with starchless depositing since very early experimental days in the 1950s. We remain the acknowledged leader because of a policy of continual improvement. Here are three examples of the technology that sets Baker Perkins apart from mogul manufacturers’ system adaptations. Moulds: Baker Perkins know-how covers the full range of moulds for jellies and gummies – metal, silicone and plastic. Our air ejection technology helps to create a perfect surface finish; metal moulds also reduce cooling demand. Our competitors deform a silicone mould - this can distort the product, and create a demand for excessive oil which is costly and an irritant. Baker Perkins deposits at final moisture so the cost of labour and energy for drying is eliminated. Runny syrups from a mogul cannot be metered as accurately as the viscous syrup from a Baker Perkins ServoForm depositor; they also require drying. Tailing is minimal on Baker Perkins systems, thanks to a combination of travelling moulds that drop away rapidly; a depositing head that lifts after each sequence; and high-accuracy volumetric pumps. Starchless depositing can deliver the highest levels of product quality and consistency. But any substitute for a system from a specialist supplier merely leads to expensive, disappointing results.
