A skinless and boneless fillet of Pangasius topped with basil pesto, char grilled peppers, aubergines and onions finished with crispy croutons and finely diced red peppers. Simply oven, micro or grill. Also Exciting Foods are using the sustainably farmed fish from the Far East called Pangasius. Not a catchy name – but it’s farmed sustainably in the Far East, has a lovely white fillet and a mild sweet flavour. Said Graham Keegan MD of Exciting Foods, “We see no sign of a slowdown in the demand for wholesome and healthy foods – in fact we believe that the catering industry is lagging behind the pace of change in retail. Additionally, customers are very aware of the pressure on fish stocks and are prepared to try new species to ease the pressure on cod, haddock and plaice.
