New continuous low-output confectionery system
Baker Perkins has introduced a continuous ServoForm Mini cooking and depositing line in response to demand for a 50 kg/hr system with the efficiency of automatic operation. The ServoForm Mini range now comprises batch and continuous options for both cooking and depositing. The new continuous option incorporates a JellyCook batch or Turbofilm Mini continuous cooker with a ServoForm Mini continuous depositor and cooling tunnel in a seamless line. The system can produce high-value functional pectin jellies or medicated hard candies, as well as standard confectionery including toffees and lollipops. It is ideal for low-volume, high-value production environments; or to produce short runs/large batches for research, product development and test marketing purposes. Based on Baker Perkins’ proven ServoForm depositing technology, Mini depositors have the same specifications as the full-size equivalent for precise scale-up. Since they were introduced three years ago, 50 ServoForm Mini batch depositors have been delivered. They are extremely flexible, and capable of rapid change between different products by simply replacing the moulds. Most have been sold to make functional gummies, increasingly used to deliver a variety of ingredients including vitamins, minerals, fibre, CBD, protein, Omega-3, robotics and energy supplements. A choice of batch or continuous integrated cooking systems is offered to meet product flexibility and output requirements. Either will work with the continuous ServoForm Mini depositing line. The JellyCook is a batch cooker comprising weighing, mixing and cooking in a single integrated system for gelatin, pectin and hard candy confectionery syrups. It can readily be used to feed a continuous depositor, and comes into its own when small batches are needed. The cooker washes out automatically after each 30kg batch so there is no danger of cross-contamination, and each batch can be completely different. This matches the flexibility of the ServoForm Mini batch depositor where a different mould set can be used for each batch, but would also be the preferred option for a continuous line producing short runs of multiple Stock Keeping Units (SKU’s). The Turbofilm Mini is a fully integrated continuous cooking system for gelatin, pectin and hard candy. Continuous dissolving and cooking brings the benefits of high efficiency, low waste and low energy use, as well as simplicity of operation to production of longer runs. The JellyCook and Turbofilm are both designed for extremely accurate addition of expensive active ingredients, colours and flavours. They may be added proportionately to a weighed quantity of cooked syrup in a reservoir tank or in-line using a continuous dosing and mixing system. The ServoForm Mini depositing system is starch-free and naturally hygienic, making it ideal for production to validation standards for healthcare products. Based on Baker Perkins’ proven ServoForm high-output depositing technology, the ServoForm Mini deposits a high quality, smooth product in 2 to 16 gram pieces, with a consistent size and shape, and high piece weight accuracy.
