The EU food hygiene regulations
Since January 2006 a set of harmonised food hygiene regulations has operated across Europe. The regulations call for tighter control "from farm to fork" and impose the need to ensure food safety measures such as HACCP are in place. Part of the package is the new EU regulation on microbiological criteria for food which specifies the need to test for product safety and process hygiene for some products and requires the pro-active use of monitoring across all food sectors as part of their HACCP verification.
